Michael is currently the owner and Burrito Architect at Dis Burrito, a Denver-based breakfast burrito wholesale business. Dis Burrito was born in his backyard during COVID lockdown summer 2020. As Dis Burrito grew Michael identified an opportunity to open a restaurant, which has always been his dream and so Fox and the Hen was born.

Michael’s culinary journey started at Johnson and Wales University, where he graduated Summa Cum Laude in 2003. From there he rose through the ranks to become an Executive Chef in Denver and also owned his own catering company.

Currently, Michael lives in Denver, Colorado where he spends at much time as he can in the mountains snowboarding, camping, hiking, mountain biking….pretty much anything the mountains allow…or down in Denver outside in the parks playing volleyball, biking, tennis, golf or checking out the newest culinary spots.
